Remembering Uncle Les, a dear uncle and great-uncle. We will carry with us so many happy memories: You were always on hand to answer our horticultural questions; you growing veggies for us to plant in our little veggie plot - they never did grow to be as magnificent as yours! The question that was always music to my ears:”do you want any leeks?” and sharing leek and potato soup recipes with you - in your opinion, mine always needed more seasoning! You chatting with the boys about their latest sporting achievements and bemoaning the trials and tribulations of being a Saints fan! And your patience when we’d all turn up to play games on the PlayStation, no doubt breathing a sigh of relief when we retreated to the dining room to play Ratrace so you could watch football or darts in peace! I picked some leeks from your garden this weekend and we will be having chicken and leek pie for tonight’s dinner and I will be making a batch of leek and potato soup in your memory and I’ll try to get the seasoning right.
